Zucchini (Or Cucumber Or Pumpkin) Bread
- 2 2/3 cup sugar
- 2/3 cup oil
- 3 cups shredded zucchini (about 2 medium)
- 2/3 cup water
- 4 eggs
- 3 1/3 cup flour
- 2 tsp baking soda
- 1 ½ tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 2 tsp vanilla
- ½ tsp baking powder
- 2/3 cup coarsely chopped nuts
Heat oven to 350° F. Grease bottoms only of 2 loaf pans, 9x5x3. Mix sugar and oil in bowl, stir in zucchini, water and eggs. Mix in flour, baking soda, salt, cinnamon, cloves, vanilla and baking powder; stir in nuts. Pour into pans. Bake until wooden pick inserted in center comes out clean, 60 to 70 minutes.
Cucumber Bread: Substitute 3 cups shredded cucumbers for the zucchini.
Pumpkin Bread: Substitute 16 oz cooked and mashed pumpkin for the zucchini.
