Taco Stuffed Zucchini
- 2 medium zucchini halved lengthwise
- 1/2 cup salsa
- 1 lb grass-fed hamburger
- 1 TBSP taco seasoning
- 1/2 small onion finely chopped
- 1/4 cup chopped bell pepper
- 4 oz tomato sauce
- 1/2 shredded cheese
- cilantro or basil for topping
Preheat oven to 400°F. Scrape out pulp from zucchini leaving about 1/4 inch shells. Place shells on baking sheet. Brown beef until no longer pink. Add seasoning, onion, pepper, zucchini pulp, and tomato. Simmer 20 minutes. Spoon into shells. Bake 30 minutes. Add cheese. Bake until cheese melted – about 5 minutes. Serve with salsa and cilantro/basil.
