Steamed Parmesan Zucchini
- 2 medium-sized zucchini
- Butter or coconut oil
- Freshly grated Parmesan cheese
- Salt and pepper to taste
Cut zucchini into 1/2 in to 3/4 in thick pieces. Steam until tender. Spread butter or coconut oil on each piece. Add salt and pepper to taste. Grate Parmesan cheese over the top, serve warm.
