Rhubarb Cake
Cake:
- 1 ½ cup brown sugar
- ½ cup butter
- 1 egg
- ½ tsp salt
- 1 tsp vanilla
- 1 cup sour milk
- 1 tsp baking soda
- 2 cup flour
- 2 cups cut rhubarb
Topping:
- ½ cup white sugar
- ½ tsp cinnamon
- ½ cup coconut
Mix the cake ingredients in the order given. Mix the topping ingredients together and sprinkle over cake. Bake at 350 for 35-40 min. Test with a toothpick to see if done. The topping forms a crust and pressing the top lightly won’t be accurate.
