Pico de Gallo (also called salsa fresca)
- 1 or 2 avocados
- 1 medium white onion
- 1 small red onion
- 2 medium tomatoes
- 1 medium cucumber
- 1 Thai pepper
- 1/8 tsp cayenne pepper
- 1/8 tsp freshly ground black pepper
- 1/2 tsp freshly ground Himalayan or sea salt
- 1/2 bunch cilantro
- 1/2 organic lime, juiced
Chop finely and mix. Chill for an hour or more. Serve with organic Blue Corn tortilla chips
