Spinach Salad With Honey-Bacon Dressing

Spinach Salad with Honey-Bacon Dressing
  • 8 cups torn fresh spinach
  • 1 cup sliced fresh mushrooms
  • ¼ cup sliced bunching onions
  • 1 medium tomato, chopped
  • 5 bacon strips, cooked and crumbled
  • 1 hard-cooked egg, chopped
  • 1 cup shredded Parmesan cheese

Combine all ingredients in a large bowl (can be done as a layer salad). Serve with the following dressing:

Honey-Bacon Dressing
  • 2 bacon strips, cooked and crumbled
  • ½ cup honey
  • ½ cup vinegar
  • 1/3 cup oil
  • 1 tsp yellow or spicy brown mustard
  • 1 tsp lemon juice

Whisk dressing together and pour over salad when serving.
