- 1 tomato
- 1 lb pasture raised pork bacon
- cream cheese or mayo
- tortilla wraps
- greens – lettuce, kale and beet greens all work well
In a small frying pan, cut the bacon into small pieces and then fry (easier than crumbling hot bacon).
Chop the tomato and thinly slice or tear the greens. Spread cream cheese on the tortilla, add some bacon, some tomato and greens. Roll up tortilla and enjoy!
Here is a variation on the same recipe – instead of using tortillas, cabbage leaves – slightly wilted (not the large stem portion).
